Toddler Food: Toddler Muffins (The Whole Family Will Love)

I originally started using this recipe when my children were smaller, to use up leftover baby food puree’s I had stored in the freezer. Now that my children are at school this muffin recipe is still a favourite –it makes a great lunchbox staple, and I can whip them up quickly even when I’m time poor, or don’t have suitable fresh fruit or vegetables on hand. Unlike store bought snacks – I know exactly what has gone into these home-made muffins, so there are no nasty preservatives or colours – just “the good stuff!”

Toddler Muffins Recipe

Ingredients

1 cup of wholemeal flour

1 cup of quick cook oats

1 banana (mashed)

1 medium avocado (mashed)

½ cup canola oil

1/3 cup of brown sugar (or to taste)

2 eggs

1 teaspoon cinnamon powder

1 teaspoon baking powder

1 Heinz baby food pouch/tin or jar

 

Tip: The great thing about this recipe is that it works just as well with the vegetable purees as it does with the fruit. When using vegetable baby food puree’s omit the brown sugar and add a small pinch of salt instead (or to taste). The great thing about the puree’s is that fussy eaters won’t even know that they are eating their fruits and veggies – and you can relax knowing that they are!

 

Method

Preheat oven to 200 degrees C.

Combine all of the ingredients in a bowl

Line a muffin tin with muffin cases and divide the mixture into the cases. I have used a normal sized muffin tray, but a mini tray is perfect for toddlers.

Cook for 20 mins (or until firm). (Mini muffins will need to be cooked for a shorter time due to their smaller size.)
