Quick & Easy Microwave Scrambled Eggs

Microwave Scrambled Eggs

Do you leave making scrambled eggs until the weekend when you know you have the time to cook them? Well now you can enjoy your favourite breakfast any day of the week with our super quick and easy microwave scrambled eggs. Yep, that’s right! You can make the most delicious scrambled eggs in less than 2 minutes in the microwave… amazing! And the best part? They taste incredible!

When you think about cooking eggs in the microwave, you imagine tough and rubbery eggs, right? Well these are the total opposite. They’re rich, creamy and delicious. The trick to getting them just right is to make sure that you don’t overcook the eggs. They are ready when they’re nearly set (they will continue to cook after you remove them from the microwave).

To make these single serve scrambled eggs you will need:

  • a microwave-safe mug (I like to use a fairly large mug so that there’s no spillage!)
  • 2 eggs
  • 2 tbs milk
  • 2 tbs grated cheese *optional
  • salt and pepper, to season
  • buttered toast, to serve

Method:

1. Start off by lightly spraying your microwave-safe mug with cooking oil.

2. Crack the eggs into the mug.

3. Add the milk and beat with a spoon until well combined.

4. Place the mug into the microwave and heat on high for 45 seconds.

5. Take the mug out of the microwave and give the eggs a gentle stir.

6. Sprinkle the cheese over the top (optional) and place back into the microwave.

7. Heat for a further 30 seconds on high. By this stage the eggs should be almost set. If not, pop them back in for a further 15 seconds on high.

8. Season with salt and pepper.

9. Serve immediately with buttered toast.

Oh my gosh! How easy is that!? It will almost take you longer to cook and butter your toast than it will to make your eggs. Amazing!

This is one of my favourite breakfasts to whip up in the morning when I want something that will keep me full until lunchtime but can’t be bothered (and don’t have the time) to slave over the stovetop making eggs.

For something a little different, you can also add chopped ham and herbs into the egg mixture. This will give your eggs a delicious flavour.
