Best Spaghetti and Meatballs Ever! (Forget the Broccoli)


So here it is, from BBC Good Food:

Best Ever Spaghetti and (Meat)balls

  • small handful of pine nuts
  • freshly grated zest of 1 lemon
  • small handful of roughly chopped
    parsley leaves
  • 50g fresh breadcrumbs
  • 1 egg, beaten
  • Garofalo spaghetti
  • Jar of tomato pasta sauce

Drain the tuna, reserving some of the oil for frying. Insist on grating the lemon zest, then gasp, scream and howl when you take out a peice of your knuckle. Try not to take it out on your little brother when he says ‘I told you it was too hard.’ Flake the tuna into a bowl and add the pine nuts, parsley, lemon zest, breadcrumbs and egg. Mix together until combined. Roll the mix into bite-sized balls. The recipe says this will make 12, but I’ve never seen anyone with a mouth that big apart from Daddy, so just make them whatever size suits you personally. Try not to drop any on the floor, because it is quite possible that Mummy will say a square-word and have to put a pound in the box. If this happens tell her you love her as quickly as possible, because she really can’t argue with that.

Cook the spaghetti according to the packet instructions; Daddy likes 100g, Mummy a little less, me and the bug between 40 and 60g depending on how much cake we had at snack-time.

Heat the tuna oil in a large frying pan, then fry the tuna balls for 5 minutes or so, turning frequently until they are golden. Drain on kitchen paper. Now the big question: do you like tomatoes? If so heat a 500g jar of pasta sauce (that’s big) and toss with the spaghetti and meatballs. I always claim I am allergenic, (it’s really useful at school dinner-time) so we use a small jar of Sacla Tomato and Mascarpone sauce. If this sounds like you, toss the spaghetti in the sauce and warm through, then serve with the tuna balls, ensuring that the two foodstuffs do not touch on the plate.

Eat as fast as possible because hopefully by the time Mummy realises that she forgot to serve the broccoli, you will be on to pudding and it will be too late!
