Delicious Zucchini Slice Recipe

Zucchini Slice

Whenever I’m looking for a simple and quick meal, I inevitably turn to this yummy Zucchini Slice recipe.  This recipe is always a big hit in our house and both of our fussy toddlers will happily eat it up and leave clean plates whenever it is served to them.

One of my favourite things about this recipe is how forgiving it is when it comes to what vegetables you add. It’s a great opportunity to use any leftover vegetables you may have sitting in your fridge.  While we generally have this meal at dinner time, it’s also the perfect recipe to make for a picnic lunch, kids school lunches or even for a birthday party.

You will need:

1 large zucchini
1 onion
1 carrot
1 capsicum
2 tomatoes
100g spinach leaves
4 rashers of shortcut bacon
1 cup of grated cheese
1/3 cup of vegetable oil
1 cup of self raising flour
5 eggs
salt and pepper

Let’s put it together!

Preheat your oven to 190 degrees (fan forced) and line a slice tin with baking paper.
Grate the zucchini, onion and carrot into a small bowl and set aside.
Cut up the the capsicum, 1 of the tomatoes and the bacon into small pieces.
In a large mixing bowl, add the eggs and beat well. Add the oil and flour and whisk together until smooth.
Add your chopped and grated vegetables, baby spinach leaves, 3/4 cup of grated cheese and mix together. Add salt and pepper to taste.

Zucchini Slice 1Pour into your slice tin and top with sliced tomato, pepper and the remaining 1/4 cup of grated cheese. Place the tin in the oven and bake for 35 – 40 minutes, or until golden brown on top and cooked through.

Carefully remove the slice from the oven and allow it to cool in the tin for 5 minutes before removing from the baking tin.

Serve immediately with your favourite sides – we love to enjoy this with steamed broccoli and snow peas along with some Alfredo pasta.

This Zucchini Slice can also be frozen for up to 2 months. Simply wrap the cold Zucchini Slice in foil and place it into your freezer.
